Fruit Parfait

Ingredients:
½ cup blueberries (other fruit can be substituted as desired)
½ cup sliced strawberries (other fruit can be substituted as desired)
1 (four-serving size) package of gelatin, plain or fruit-flavored
¾ cup boiling water
½ cup cold water (ice cubes)
¾ cup whipped topping (use dairy-free if necessary)
Mint leaves (optional)

Directions:
Divide fruit between six parfait glasses. Dissolve gelatin in boiling water. Combine cold water and ice cubes to make 1 1/4 cups. Add water to gelatin, stirring until slightly thickened. Remove any remaining ice. Measure 3/4 cup gelatin, pour over fruit in glasses. Chill in refrigerator until set, but not firm.

Fold whipped topping into remaining gelatin. Spoon into glasses. Chill until set, about 1 hour. Garnish with additional fruit and mint leaves, if desired.
