Mock Egg Salad

M, W, P and N; optional E

1 package firm silken tofu
¼ cup mayonnaise, or egg-free mayonnaise substitute
1 T stone-ground mustard
1 tsp salt
¼ tsp pepper
¼ tsp turmeric (for color)

Crumble the tofu with a fork. Add remaining ingredients and mix well.
