Ballmer-Weber et al - Clinical characteristics of soybean allergy in Europe: A double-blind, placebo-controlled food challenge study

Soy products are widely used in the food industry today and healthcare providers are seeing a significant incidence of allergy to soy. Because there is a lack of understanding of the nature of this allergy, Ballmer-Weber and colleagues studied European soy-allergic patients to learn more about their allergic reactions and the amount of soy that causes symptoms. In the June 2007 issue of the Journal of Allergy and Clinical Immunology, the authors report that they found soybean allergy to be highly variable with a wide range of symptoms and levels of sensitivity. Their findings emphasize the need for further study of soybean allergy to improve understanding of its diagnosis and management and determine if more detailed food labeling is needed for soy ingredients.
